Our sparkling wine with sediment is hand-harvested in the first week of September in the Treviso Valley.

The grapes are carefully hand-harvested in crates. After vinification, the Prosecco becomes sparkling through natural fermentation in the bottle and appears “with sediment,” meaning it contains the natural noble yeasts of the wine, which give it fragrant notes of bread crust. In the glass, it shows a more veiled color compared to classic Prosecco. This characteristic should not be seen as a flaw but as a merit, representing the wine’s genuineness and naturalness, minimally processed in the winery and extremely easy to digest. Its freshness and delicate minerality frame the elegant body of the sparkling Prosecco with sediment.

It is the ideal wine from aperitif to first courses based on pasta, rice, soups, and purées, as well as asparagus and eggs, cured meats, and medium-aged fresh cheeses.

The Sparkling Prosecco with Sediment represents the ancestral way of making and tasting Prosecco, a wine with deep roots in the Veneto region.

In tasting, for many it is “THE WINE YOU DON’T EXPECT,” and with surprise, one discovers an effervescent, aromatic… cloudy wine!

What’s the best way to drink Prosecco col fondo? Start experimenting — open it, taste it, and try to capture its soul.

The recommendation includes four different serving methods:

  1. Pouring it directly into the glass.Be careful to move the bottle slowly so as to pour only the clear part. The cloudy part can then be poured in later, if desired.
  2. Decanting it.Separating the clear part from the cloudy one and allowing the wine to oxygenate.
  3. Shaking it.By gently shaking the bottle before pouring, you’ll enjoy a cloudy and intriguing wine.
  4. Riddling it.It takes some time to perform the remuage, but we assure you the result will leave you amazed.

For optimal tasting, a serving temperature between 8 and 12°C is recommended to highlight the aromatic qualities of the sparkling wine with sediment. It pairs perfectly with appetizers of cured meats and cheeses, typically from the Veneto region and beyond; first courses and purées, as well as white meat and game, enhance the structure and breadth of this sparkling wine with sediment.

The aromatic profile of the sparkling wine is concentrated in a very narrow channel within this glass, making it easy to quickly identify the main aromas.
