VINIFICATION: Soft pressing, temperature-controlled white vinification
SENSORY CHARACTERISTICS
VISUAL EXAMINATION: It has a light straw yellow colour and fine effervescence expressing long and persistent chains.
OLFACTORY EXAMINATION: It is characterized by a bouquet with decisive traits ranging from notes of citrus and apple to wisteria and jasmine, which emphasise the enthralling complexity between fruity and floral notes.
TASTE EXAMINATION: Unique and singular are the expressions of tropical fruit. Pleasantly full, fresh and harmonious, it is lively and vivacious when drunk young. On the tongue it has a balanced and harmonious savouriness with fruity aftertaste.
FOOD PAIRINGS: By tradition, it matches with aperitifs, fish appetizers, fresh cheeses, first courses of white meat or fish, and second courses of grilled or fried fish and white meat. It's also excellent with dessert.
